Salmon Loaf

 

Salmon Loaf

2 eggs (or egg beaters, or 1 egg and 2 egg whites)
1/2 cup milk (skim)
2 Tbsp margarine
3 Tbsp lemon juice
2 tsp finely chopped onion
1 tsp salt
1/4 tsp pepper
4 slices bread, torn into pieces
1 15-1/2 oz can of salmon, drained and flaked
Paprika

Stir the eggs in a large bowl.
Add milk, melted margarine, lemon juice, onion, salt, and  pepper. Stir the above.
Add bread and salmon, then stir.
Pour into a greased standard size loaf pan. (or spray with oil)
Sprinkle with paprika.
Cook uncovered at 350 deg. for one hour.

Fast Chilli

 

                            Fast Chilli

     One pound turkey or beef hamburger.
     One large can of whole tomatoes, drained.
     One large can pork & beans. (or 2 small cans)
     Tobasco sauce to taste.
     Salt and pepper to taste.
     Fry hambuger and add dried or real onion, drain.

     Cut tomatoes into one inch pieces.

     Add tomatoes and pork and beans.

     Season to taste and Heat until hot.

Chicken/ Vegie Soup


Quick and Easy
Chicken and vegetable Soup

1 chicken breast
32 oz carton of Pacific Free Range Chicken Broth
12 baby carrots
1 baby bok Choy
¼ cup onion, chopped
1 large celery stalk
1 small zucchini
Wide noodles (2 hand fulls)
Cut chicken into one inch chunks
Cut all vegetables into ½ inch pieces
Bring Pacific Chicken Broth to a boil.
Add chicken and vegetables and noodles.
Bring broth back to a boil, and then simmer for 20 minutes.
Serves 2 to 4.

Fish or Chicken Mixture


 
 
Fish or Chicken Mixture (from the cook on a party fishing boat)
Note: Chicken = Skinless / boneless chicken breast.
         Fish    = Frozen Mahi Mahi from Costco or any white fish.
½ cup flour
1 Tbsp Season salt
1 tsp garlic powder
½ tsp lemon pepper
Olive oil or canola oil
Mix first 4 ingredients together. Place in an air tight container.
Sprinkle mixture on both sides of fish or chicken.
Heat oil (just enough to cover bottom of pan) to 350 degrees or on medium heat. 
(oil will shimmer when hot enough)
Add fish or chicken, cover and cook for 2 minutes on one side.
Turn and cook for 2 minutes more, then reduce heat to simmer and cook for 3 to 4
minutes more.

Note: Mixture not for Salmon or Tuna.

Veggie Patties

Iv'e been cutting down on the amount of red meat I consume for better heart health. The one I found to be the most tastefull is,Don Lee Farms
All Natural Veggie Patties. There sold at Costco's and located in the cooler bins right across form the meat department.They come 15 in the package and I put a piece of wax paper in between each one and then freeze them.You can heat them in a dry pan over medium heat for one minute on each side. Don Lee Farms Veggie Patties are the best.
